
From plant to bottle
At Distillerie Cérès, each spirit tells a story. A story of plants, time, and precision... Here, we open the doors to our method: from distillation to maceration to packaging. Handcrafted on-site, with attention to detail and respect for the product.

Distillation
At Distillerie Cérès, each creation goes through an essential step: distillation.
It is made in a hybrid copper still, gently heated in a bain-marie. This process respects the raw material, preserves the finest aromas, and produces rounder, more balanced spirits.
For the more delicate plants, we also use a gin basket, which heats more slowly: the plants are not cooked, but infused with steam, to preserve all their aromatic freshness.

Maceration
Some recipes incorporate maceration after distillation, which enriches the aroma and adds bitterness, natural acidity and plant depth.
We allow time for the plants and roots to infuse slowly, so that each aroma is fully integrated and gives the spirit its structure and balance.
In this step, water and sugar are added gradually. These two elements, essential to the final balance, are incorporated gradually to allow for a better bond between the components and ensure a smooth and pleasant texture in the mouth.
It's also this maceration that gives our products their natural color: no colorants, only plant extracts from the plants used. The result: soft, authentic, and vibrant hues.
We use noble raw materials: wine alcohol and quality sugar, both from our French countryside.

The packaging
Packaging is the last step in our process… but certainly not the least important.
At Distillerie Cérès, everything is made on-site, in our workshop, by hand, with care. Very little mechanization: only a filling machine and a labeling machine accompany us, to ensure precise movements. The rest? It's done by humans, bottle after bottle.
Our materials are carefully chosen:
The bottles come from France, with 30% recycled glass, as do the boxes, as do our labels, often from local suppliers in Auvergne.
Finally, none of our products are chill-filtered. Why? Because this step too often alters the aromas. We prefer to preserve them in all their richness and complexity.
Each bottle you hold in your hands is the result of precise, respectful craftsmanship, from start to finish.
